Adult child being sued for her dog biting a guy at work…she lives at my home, but I do not want to be named in the suit, so cannot file a claim with my home insurance

Assuming there is coverage for your daughter, the insurance carrier should be alerted and provided with any court papers immediately. If you are not otherwise responsible, having the insurance defend her should not trigger an amendment adding you to the lawsuit. If it does, insurance will defend you and should work quickly to get you dismissed. Again, this assumes you are not otherwise responsible for the incident.
If this 'bite' didn't happen on your property, and the dog is not yours or under your 'control' at the time, and the dog owner / handler is an adult, then you and your homeowner's coverage should not be involved or liable. If despite all that, you are named in a lawsuit, whether you 'do not want to be, or not', turn it over to your homeowners' insurance carrier or hire a private attorney to properly respond to the suit.
