i am bed ridden because of my high risk pregnancy, is it okay for my husband to go in do the taxes and sign my name for me when he signs?

I assume the taxes are being done by some outside firm. Why not have your husband bring the papers to you and the return them to the firm or mail them off himself? If you do not want ot do it that way, write up a limiled power of attorney.
On account of my being confined to bed on orders of my treating physician because I have a high risk pregnancy, I will be unable to sign the tax documents to be submitted, so I give my husband, [his name] a limited power of attorney, which will expire one month after my pregnancy is over, to sign my name to all tax documents for which my signature is necessary.

If you do it in your own handwriting you probably do not need any witnesses; it does not hurt if it is easy to do. You can revoke it at any time you wish.
