I live in California but know a good attorney in Texas. Can the attorney in Texas do my Will and Trust even though I live in Califonria?

Not unless he wants to practice California law illegally and you want an estate plan that will most likely become a complete mess once you die. Trust and Probate law is one of the most state-specific areas of the law, probably second only to Family law. If he is actually a good attorney, he should know that and decline to do the work for you anyway.
