Recording a conversation
Is my child's father allowed to record me witout me knowing and then uses it in Family court to gain custody of our child

Generally, no. But, that doesn't mean it won't happen.
Actually, it doesn't matter whether he records it or not, if you say it, expect bad statements to be used against you.
Whether the court permits a recording to be used in court is entirely another story.
