Can a job I'm applying for find out I been arrested if they do a background check even if I haven't been convicted in Florida of retail theft thank you

Probably depending on how they do their background check. Until you get a charge sealed or expunged, it is a public record. However, you can explain that you are presumed innocent and get yourself an attorney to fight the charge.
