Legal Question in Landlord & Tenant Law in Florida
Regarding the state of Florida; ~2 years ago I entered into a lease agreement with a roommate at an apartment complex. Said roommate decided they would be moving and wanted to terminate the lease early, so I was signed/released from the lease agreement; I have the copy of the signed release. Now the former roommate is asking for help paying the collections. If I give them some money, can they use that as a premise to sue for the other amount in collections?

Sorry but without the paperwork involved there is no way to answer this question. Also, I am not sure what "other amount" in collection means. Paying one debt does not necessarily make you responsible for another unless they are part of the same transaction. Consult with an attorney with your paperwork.
