how do my wife and I have a quitclaim deed written including putting our names on it so we don't have to go through probate if one of use dies.

Simpliest, but not necessary the best way is, "John Doe and Mary Doe, his wife." This creates a Tenants by the Entirities which accomplishes what you want.
