married name

Once I have married my fiance, is it mandatory that I change my current legal name to his or can I keep my name and not accept his last name?

You have to make your choice on teh apoplication for a marriage license. You can take his name, or he can take yours, or you can hyphenate, or you can each keep your own. (I'm familiar with the rules as I perform weddings in my office as a part-time judge). Be sure you do the application as you wish your name to be.
