I am an American citizen. Can I marry a woman from Brazil who is out of status, and will she be able to stay here in the U.S.?

If she initially entered the U.S. legally, even if her authorized stay has subsequently expired, all sponsorship paperwork based on marriage can be filed concurrently with the USCIS and your wife, when you are married, will be able to adjust status in the U.S.

Yes, you should be able to marry provided that she has her documents. As a first step, you may want to call your local courthouse and inquire about documentary requirements when applying for a Marriage License.
However, she will need to have a passport, I-94 form and a visa as a prerequisite of her applying for residency (so called 'green card') in the United States. If she came to USA on a visa, and not otherwise inadmissible, she should be able to apply for her residency after marriage to you, a US citizen. Because she is currently 'out of status', it's advisable to have a professional legal help preparing your immigration applications and other supporting documents.
