Can a Power of Attorney can prepared by me, notarized, sent to the person I name as such, them notarize and a copy of said document sent back to me?

What type of power of attorney? A durable or a health care?

In any event, you should conduct research to determine the proper form for the power.

It doesn't cost that much to have an attorney draft a power. If you want to do it yourself, you should have the proper execution and formality.

Powers of attorney are not signed by both people, so they are not done at all the way you say. Given that one can be done correctly by a lawyer, often for under a couple hundred dollars, why do one improperly that will be invalid. (My fee for one starts at $150).

The formality in signing depends on the use, but some require multiple witnesses and all need proper language.
