My siblings just found out the our grandmother's will that her son, my uncle, changed her will without her knowing what changes were made. What can we do about this as she is still living and states that what the will says is not what she wants in the event of her death?

None of what you posted makes any sense. Your uncle cannot change someone else's will. Only your grandmother can sign her own will. Post the correct facts and possibly someone here can respond.
Your uncle cannot change her will without her formal execution of the document and proper witnesses. Did he forge her signature and obtain witnesses who lied about her presence?
If she is concerned about her son, she needs to take the document her son created to a lawyer. The lawyer can properly advise her on the validity of the questionable document.
