IL law provides for one day of rest in every seven days so this appears to violate that law.

I want to revise my answer and apologize for what I think was an incorrect answer. Purusant to 820 ILCS 140/2, Sec. 2 "Every employer shall allow every employee . . . at least twenty-four consecutive hours of rest in every calendar week in addition to the regular period of rest allowed at the close of each working day." I think because they are satisfying the calendar week requirement, their practice is likely lawful.
