can text messages be used as evidence against a defendant in a criminal trial if they were written down by the investigating detective from the victim's phone?

Yes, if the prosecution persuades the court during the motions hearing that the evidence is reliable enough to accurately reflect the communication and that it really is the defendant who sent it.

theoretically, yes, but get a lawyer who can properly object. Also, how can they prove who the msgs came from?
