If I wanted to show a picture as evidence, do I need to do anything in advance so that it can be used during the trial? I'm not sure what law category this is under but I've been accused of damaging someone's vehicle when I towed it and I want to show a picture of a car on a rollback to show that there is no way to hit something while transporting the car

Given your objective, you will need to authenticate the photograph. Assumedly part of this would be to time/date stamp the photo.
You do not mention whether this is in Circuit Court or District Court and this has a bearing upon your inquiry.
