paralegal write a counterclaim file w/answer?
can I hire a paralegal to write a counterclaim/ lawsuit?
I've already filed my answer, but I still have 10 days to add to it, without judges ok, can I add the countersuit and do I write it on the answer document or a lawsuit document?

No- it constitutes the unauthorized practice of law on the part of the paralegal. Why not hire a lawyer? A separate document entitled counterclaim is the best practice.
