payment of legal debt

e.g. if an individual owes you $1000.00, and he writes a check for $925.00, should you cash the check while pursuing the remainder, or not cash check?

What, 92.5% of the debt isn't enough?

It depends on whether the check is tendered as "payment in full"; if it does, the payer will have a claim that it was a compromise of a disputed amount and settled the claim. If it just a check, with no cover letter, nothing on the check itself, no special endorsement on the back, cash it.
