I have recently had two legal documents (Power of Attorney and Health Care Directive) notarized in the state where I work, which is adjacent to my state of residence. Since the documents I downloaded were for my home state, that was the state printed on the notary area. The notary crossed that out and put in the name of the state where it was being notarized. Will the documents be legally binding?

If your home state recognizes them, probably because the place of execution doesn't change your plans

Without reading the documents, I can't tell you if they will achieve what you hoped for. Many estate plan documents sold on the internet are rubbish.
Good luck
