Legal Question in Business Law in New York
I made a deal (witnessed) to purchase a snowmobile. I gave cash down, and received a written recept for the down payment and outlining the cash due at delivery. Now the seller wants to dissolve the deal because someone offered more. What rights do I have?

You can sue for breach of contract. One measure of damage is loss of the bargain and other damages incurred for his breach. Of course, you can obtain your deposit back.
First, demand that the deal go through or you will sue him. This might resolve the matter.
