a woman passes away and 2 weeks later her family receives a large medical bill. Are her adult children responsible for paying the bill?

No, her adult children are not personally responsible for the bill. This answer assumes they did not sign documents assuming the responsibility.
Oftentimes, creditors attempt to guilt survivors into paying theese debts.
Nevertheless, the hospital can seek payment from her estate. The executor of the estate has the responsibility to read the will, collect the assets, pay the liabilities, and distribute the remainder of the estate in accordance with the will. If there are insufficient assets to pay the liabilities, neither the executor nor the children will be responsible for any deficiency.
