Legal Question in Civil Litigation in New York
when replacing an attorney and continuing the case pro se, is it necessary to send a copy of the stipulation of discontinuance to all parties, or is enough to file it with the Court and notify the others by Notice of Appearance that I now appear on my own behalf?

A stipulation of discontinuance is a document that stops the action. So, based on your question, you would not be filing this document.
Instead, you would be sending a letter to all sides - including the Court - that you terminated your attorney and that you would be continuing the case pro se.
