Payroll Taxes

I am a waitress that lives in NYC, and my employer gave me payroll checks that did not tell me how much was taken out for taxes. Something felt fishy, and I wound up quitting because they wanted to decrease my pay. I have been asking for the tax information because I have compared the amounts of my total before taxes (I kept careful track of my credit card tips and shift pay) versus the amount I wind up with. For example, the total amount I made in two days before taxes was $275, but I only received a check for $195. My employer is not answering or returning my calls, and I don`t know what to do.
