Legal Question in Wills and Trusts in New York

My mom lives in NY state. She is 81 yrs old . She does not seem interested in preparing a will. What would happen to her property and belongings without a will. She has no living spouse but 5 adult children. Whenever I bring up the subject of preparing a will she gets defensive and really doesn't want to talk about death. Please help. I don't want to have to face this alone since I am the only one around her that takes care of her.
