I am opening a Non-profit Corporation where I will help children / young adults by having interactions with my horses. Problem is my husband is concerned what type of "guarantee" that someone could sue us and we lose our family farm?

As a Franchise Attorney I don't understand what your husband is referring to when he says "guarantee." In addition, if the entity is set up as a valid corporation, your personal assets, like the family farm, should be insulated if it's done properly. Consult with a good business or franchise attorney in your area for specific advice.
