It doesn't take a genius to prove that tested food is defective. The problem is that the food has been either eaten or tossed out long before it can be tested. As a result, finding other evidence that the food was defective is often the real challenge in these cases.
One way is to review the preparer's food-handling history. This includes any prior problems with food contamination, inspections of the facility and review of food-prep procedures. This information can be acquired through the discovery process or use of federal or state Freedom of Information Act.
The good news is that these are strict liability cases. In other words, you don't have to prove that the food preparer intended harm, was negligent or was in some way at fault. You just have to prove that it was the preparer's food that caused the problem.
