my resident alien card has an incorrect birthday, It's been that way since I have arrived in the USA. I have criminal convictions on my record under my incorrect birthday.Upon showing proof of my correct birhday with an authentic birth certificate from the my country would it start my record over

No, you will not start your record over. Your conviction will follow you and your record (name and fingerprints).
However, it's very important to have a correctd date of birth on a permanent resident card.
