How can I go back on a mortgage that is less than 30 days old

I'm not aware of any provision of Texas law that would allow you to get out from under a mortgage, even one that is less than 30 days old.

You would probably need to sell the property in order to get out of the mortgage, and even then you would probably lose money on the deal since you've owned the house for such a short amount of time.
