If a will or trust is not in place when you die what happens to everything...Children, House, Personal Property Etc. Would my Ex be entitled to it all?

If there is no will in place and you die, then there is a statutory scheme that takes over. Most likely the ex would not be entitled to anything (except, maybe, as a guardian of your children.) You can get a will done inexpensively, so why take a chance?
