Can we request a change of venue for an appeal on a change in visitation/custody case? Does the case have to be heard in the jurisdiction the children live in?

No, not necessarily, if there are compelling reasons for a party to seek a change of
venue elsewhere (which doesn't necessarily mean that such a motion
will be granted).
