What is the difference between an exhibit and a documentary exhibit in trial?

An exhibit is something presented at trial which the party presenting it usually asks the court to admit as evidence to support some theory or cause of action that a party wishes to advance at trial. A documentary exhibit is one type of exhibit. Typically, this is a piece of paper with some kind of information on it, but it could also include a transcript of an oral hearing or other tape-recorded event.
Other exhibits include physical items, such as a gun, a ring, a computer's hard drive, or other physical item which is somehow relevant and one party seeks to admit it as evidence in a case.
