if a co-worker records conversation without your knowledge, is it illegal?

No, the recording of a public conversation by one of the participants without the knowledge of the other is not illegal although it is surely socially unwise. None of us likes that.

The misuse of the information in some fashion, e.g. to gain an advantage of the person being recorded, may well be illegal and a felony such as extortion.
