If when hired agreed on a set schedule with set days off, can the employer alter that agreement so that others can have the holidays off, and make us work 5 consecutive 13 hr days in a row

Employers are free to determine, set aned change: hours, pay, duties, etc. They just can't change retroactively. You have to be paid correctly, including OT for what you work. You are free to refuse a schedule, but they are free to fire any time for any reason because you are an 'at will' employee.
