If I am hit by an underinsured company car, can I go after the owner of the company or just the company? What if the company has no assets?

If the driver of the car is liable for the accident, then you may be able to look to the employer for compensation. Under some circumstances, the "corporate veil" may be pierced and the owner of the corporation held responsible for corporate liabilities, but this is fairly technical to argue.
