terminated because he can't cook

I have an employee who has worked for me for approx 5 months. I terminated this employee because he has been trained to cook in our kitchen and continually burns every thing, or serves out food that is unacceptable to our standards. I have tried and tried to point this out to him and given him many chances to get with the program but the guy can't cook. He is always on time and works whenever I need but I truely beleive over a period of time it could be damageing to my restaurant. He now says that I need to give him something in writing stating that he is terminated. He also says that there was no reason to terminate him and his attorney told him to report to work on his next scheduled shift unless I write this note of termination... Is this true? This person could really have done damage to my buisness if I didn't let him go. Where do I stand?

Unless you have an employment contract with the employee, employment in Illinois is "at will," meaning you can terminate him for any reason with no explanation, written or unwritten.
