would it be better to add my beneficiary to my bank accounts or sign a power of attorney?

The two aren't really related. A power of attorney dies when you do. It would have no effect on your bank accounts after your death. Adding your beneficiary to you bank accounts may or may not accomplish what you want and could leave you open to all sorts of problems while you are alive. You should talk to a good probate and estate attorney for help in accomplishing what your goals.
