Legal Question in Family Law in Texas

My grandfather wants to adopt my daughter. Do I have to sign over all my legal rights as a parent or can he just be added to the birth certificate, since her father isn't listed on birth certificate

There's no such thing as adding somebody to a birth certificate, unless it's the actual biological father or someone who adopts. To put a random person's name on the birth certificate (someone who isn't a parent) would simply be a lie.
